Today I had the most amazing home made lunch

- thick red lentil and veg soup (loaded with cardamom and curry herbs, so fragrant!)
- mediterranean salad (grilled eggplant, capsicum, olive, Fetta, sundried tomato, spinach, fresh basil)
- soy ice cream with maple syrup
- brewed alcoholic ginger beer x2

You?

Like some ideas !

Oh wow, SunChild, when can I visit you?

I had stuffed tomatoes and peppers with potatoes in the oven. It's normally a summer season dish but the chef is nuts so...

Pita pocket bread cut in half

Mixed greens
diced tomatos, red, yellow & green peppers
sliced red onion
mushrooms
black olives
cheese
mayo

stuff it into the pockets after mayo-ing the inside and laying down cheese

then bake on 400 for about 5-7 minutes or until you see cheese is melted.

So delish. I eat these often and do prefer mine warmed up like that because it slightly toasts the bread and melts the cheese.

also good in a wrap.

learned this from an old roommate:

Jumbo shrimp (cooked, tails removed)
Ritz crackers crushed
salsa
butter

mix together in baking dish

bake on 400 for about ten - 15 minutes

no exacts because i always wing this one

but it's delicious, quick and easy
as an appetizer, or light lunch or dinner

Yummy!
You can add broad beans and even cooked rice in them and make them a fake tortilla lunch.
