I read about this in a book I bought just before Thanksgiving (Kimberly Snyder's book). I tried to make it just after christmas, but was afraid I'd messed something up, so I didn't try it, and just threw it away. I've been meaning to try it again, but experiencing botulism isn't high on my list of wants, so I googled tonight, and found out that making this type of thing isn't unusual, and that nobody appears to have died from it, so I'll be trying again soon. This lady had us searching all over the place for miso (we only have a few places at which it might be found), only for me to find a video of her making it with simply sea salt, cabbage and water. Anyway, if I try it, I'll report back. It would be nice to have something work for me, and to stick to something (I'm failing miserably in several areas of my life). I screwed up milk kefir over the holidays 2010 - a whole bunch of milk and kefir grains wasted, as it piled up in the fridge and then had to be thrown out when I forgot about it. I've just finished making this again, but I'm afraid there's too much liquid in there (still). :/ I hope it's okay. I was happy before, but this is frustrating.IP: Logged |

I think I screwed this up again, by moving it. The cabbage didn't stay packed in, at the bottom, when I moved it to what I hoped would be a slightly warmer location.IP: Logged |
