I just had lunch, sooooooooo tasty that I want to share, sooooooooooooo EZ
When you come back from work, and have nothing but a VERY GOOD CHICKEN STOCK, use it:
unpack 4 cups of yougort, add 6 tablespoons of flour, stir and set aside.
In a casserol, bring stock to boil, then add carefully the yougort mixture, keep stiring till thickens.(if yougort mixture is thick before adding, you can soften with some stock)
fry (in butter) 3 big onions, grated, till brown.
Add half fried onions to the casserol, save some to garnish the plate. (you can mix in, pieces of chicken, optional)
Used on rice, or with bread crumbs.
This is called (keshk) in Egypt from Turkish kitchen.

about a veggie.....

i thought i could do this using a very good veggie stock and soy yogurt and olive oil (instead of butter to fry the onions.) still sounds yummy.

although i'm not a vegan, so all i really need to exchange is the veggie stock.

but if i were vegan, that's what i'd do.

because it sounds so good!

you could substitute potatoes for chicken if the optional chicken is necessary.

Hey everybody, now I'm not responsible for what this will turn out to be. NO potatoes in keshk. GOOD keshk depends greatly on the GOOD chicken soup.
Try it once as it is, then you can make changes accordingly.

i guess you could use vegetarian chicken flavored stock.....and vegetarian chicken nuggets if you have to add chicken pieces.

keshk does sound delicious....but veggies don't eat chicken stock!

apologies to traditional keshk!

grilled cheese with pickles is a heavenly treat....and i don't think it would be the same with soy cheese.....

Ouu, that sounds really good! Are there any spices that can go into it? I have masala curry (I know, it's Indian) and other whole spices at home. How much chicken stock do you have to use?

Do you have any Egyptian cookbook recommendations?
