Pumpkin is delicious--and very rich in nutrients and micronutrients.

Butternut squash was one of the mystery basket ingredients last night on the new Chopped.

Oh yes it's the best, Randall & Charm.

I cook butternut pumpkin in veggie stock and use a bar mix to cream it. Of course you can add butter and cream. I often use olive oil and sea salt.

My Vietnameese Pisces sister in law is quite the accomplished cook...

Her squash soup is the BEST!!!

My kid, as I write, is preparing the pumpkin seeds, from the Jacks we just carved...

She does em pumpkin seeds quite fine!

She meandered my fall gardens and found some lavender and lots of rosemary to cook em with.....

Need to get back to this forum...

yummmy~

Do you bake them or fry them?

She first boils them, for just a bit to loosen and clean.

Then she fries them to infuse the flavor and finishes them up in the oven.
