Just got in from Chi town late last night...

I LOVE Chicago, we in San Antonio think we have ethnic diversity here, go ahead and fly into Midway and rent a car and just drive.

On the way back to MDW yesterday, my brother's family and I, were looking for someplace to eat to pass some time..we found the best place in the food court of Midway airport.

As my brother and his wife and my nephews did their thing, I grabbed a Blue Moon, draught,and walked the food court..I was SO impressed as to how this (once tiny) airport on the south side of Chicago represents their diverse culinary ethnicity so well!

I setteled on another Blue Moon and a 3 cheese Paninni...while the rest of the clan ate deep dish Chicago pizza, gyros, salads etc..

WOW!

After the jet lag and my work week, the next two days... week I have IDEAS!!!

So today I am finally off travel and work..sigh...yay!!!

I am having alot of home fixerup's and remodeling done so I can get my blessed home on the market..in the meantime...

I saw, whilst browsing the food court at Chicago Midway, a line of salad toppings...now they had a penne pasta salad, a fruit salad, a tomato and mozerella based topper, but what really caught my eye was the roasted veggies~bell peppers, tomatos, garlic, onions, zuchinni and yellow squash, chilled to be added ontop of a nice bed of leafy greens.

Well, now, that is my experiment for the day...
