Okay, my fiance is from Africa. When I met with him in Yemen, his sister made a few African dishes for us which I really enjoyed. I am supposed to fly to europe next month to visit him again and would love to attempt to make him something with an African flair.
I really wanted to try to re-create a type of stew she made for us a couple of times. It was reddish in color and had lamb, carrots and potatoes in it.. and it was a tad spicey.
I know that we have a very diverse group here so I thought I'd try asking you all..

Moroccan-style Chicken & Potato Stew
Note: This recipe makes a lot. Cut in half

1 T olive oil
4 skinless, chicken breasts, cut into 1" cubes
1 medium onion, chopped
6 cloves garlic, minced
1 tsp salt
1 tsp ground cinnamon
1 tsp ground cumin
1 tsp curry powder
1 tsp ground ginger
1 tsp crushed red pepper
2 (14 oz) cans stewed tomatoes, undrained
4 medium potatoes, cut into 1" pieces
2 cups baby carrots (peeled)
1/2 cup raisins
2 T lemon juice

In a dutch oven or large saucepan, heat oil over medium-high heat. Add chicken,
brown on all sides, about 8 minutes. Remove chicken from pot, set aside. In
same pot, cook and stir onion and garlic 4 to 5 minutes or until onion is
translucent. Stir in salt, cinnamon, cumin, curry powder, ginger and red pepper;
cook and stir 30 seconds or until fragrant. Add tomatoes, potatoes, carrots and
raisins. Heat until tomatoes just come to a boil (Mixture will look dry at first;
additional liquid will form as stew cooks).

Return chicken to pot. Cover tightly; reduce heat and simmer 35 to 45 minutes or
until vegetables are tender.

My ex is Nigerian and taught me how to cook a few dishes..the only problem is i never cook with measurements...
So... use
About 2-3 kilo of tomatoes and blend in a blender and boil it up with some oil,chopped onions..chilli powder,curry power,salt and pepper...simmer until the mixture has reduced and is thicker...add a little bit of sugar if u choose..this can reduce and bitterness u get sometimes with fresh tomatoes..you can also add some fresh chopped vegetables now...any u choose..or add then later if they are frozen variety..

*edited* i forgot about the oil...which u need of course...try to get an oil called palm oil..its red in colour..

Now take whatever meat u want to use...many Nigerians like to have more than one type of meat in thier stew...you can either boil it with onions and the same spices then fry it a little or grill it...once the meat is almost cooked add the tomato mixture(if using frozen veges add them now)

Let the meat and the tomato mixture simmer so the meat can take on the flavour...

there is a similar dish u can do with the same recipe but u add some tomatoe paste and then some water and rice to make it almost like a risotto....simmer covered till the rice is tender(u can cheat on this one too and cook your rice seperate and add at the end)

YES! I knew I could count on you guys!
I will try them both. I want to try a few recipes before he comes. He wanted to live in Dublin, but because of my kids I suggested the states. It's kind of tricky to bring him over here. We are applying for something where he comes to the states and we will have 90 days to get married. Then we get to jump thru more hoops to het him a visa so he can stay here.
It's okay.. it will be so worth it!

He made something once called semovita that we ate with our hands and dipped in the stew. It was such an experience and I'm so very much in love with him!!!

What part of Nigeria is he from do u know??
I think the thing u dipped into the stew was Semolina...its rice powder..not too hard to make either...u just add hot water and stir...fills your stomach
yummm making me hunngry now!!

i know this isn't what you were asking. but my suggestion to you is don't recreate the meal - make something else - even a different african meal - he'll appreciate it more.

Yeah I've thought of that too. The first recipe sounds like something I've heard of before but haven't tried. So I'm kind of excited to try the new recipes. I think he would dig that.

And as for what part of Nigeria he's from, it's Ibadan, Oyo-state.

And yes, the stuff we were dipping in the stew was semolina (probably messed up the spelling lol).

And if anyone knows.. is that some kind of tradition in Africa where you feed each other? It kind of tripped me out when he started feeding me with a spoon.. then his sister did it.. then when he grabbed some of that semolina with his fingers and fed it to me.. you can imagine how big my eyes got. Then I just laughed..

I asked him about it but I think the question was lost in translation lol..

Oh.. and his sister gave us something to get married that she brought from Africa. There's a pic I posted in this thread if you're interested..
