Well, not from a pipe or anything As lots of you know I am a transplanted Texan...naturalized... However my roots are in The Midwest. Last trip to Indiana, I went to the market to find lovlies to make breakfast for everybody before we drove to Chi town and got on the plane. I found this most awesome cheese! This most smokey awesome cheese, in a little market in a little lake town in northern Indiana! AND I cant find anything worthy of comparison in this big city! So....I chose to smoke my own. The first attempt was a start, but I ended up cookin it, today I am trying again. Using apple and oakwood to make my salmon and filet mingons for my work week, and will, when the fire is way, way on it's way out place the swiss I have prepared. Put a bunch of swiss chunks in a little souffle cup (trying to keep a shape) cut up some fresh garlic and picked rosemary from my gardens...o, and a bit of ground black pepper... suspense!!!! o, its awesome! It is a lighter smoke than meat, but I like the heavier smokey flavor better.Found an Amish smoked cheddar the other day that comes pretty close to perfection~ IP: Logged |

Hi Randall....enjoying a coupla days in a lovely old Victorian mansion in Amish country. Stopped by a little Amish grocers yesterday and picked up a very large chunk of smoked Swiss....they had all kinds of smoked cheeses for a fraction I would have paid in San Antonio...I have it outside my room on the balcony with a bottle of local wine in refrigerator weather......CHEESE!
