This is from Marian Burros' low fat cookbook Eating Well Is The Best Revenge. I used this cake to capture my husband's heart; the cranky old bachelor swooned and practically fell into my cunning little arms when he took a bite!

(Slightly exaggerating but...only slightly! )

Ingredients:
-1/2 stick unsalted butter
-3/4 cup + 2 tablespoons sugar
-1 and a half medium bananas, cut into large chunks
-1 cup unbleached flour, sifted
-1/2 cup egg substitute (I think I used real eggs, though)
-24 halves ripe, pitted prune plums or about 3 ripe plums, sliced into wedges
-1/2 lemon
-1 teaspoon cinnamon

1. Preheat oven to 350 degrees F.
2. Beat the butter, 3/4 cup sugar, and the bananas with an electric mixer until well blended. Beat in the flour, baking powder and egg substitute until well blended.
3. Spoon the batter into an 8-,9-, or 10" ungreased springform pan. Arrange the plum slices, skin side down if possible, on top. Sprinkle with the remaining 2 tablespoons sugar, or more if the plums are very tart. Squeeze lemon juice over the top and sprinkle the cinnamon.
4. Bake 1 hour until center tests done. Remove, cool to lukewarm and serve.

*This cake freezes well*

For frozen cake, defrost and reheat briefly at 300 F.

I knew this cold snap was good for something!!

Making Plum tortes . It sounds easy & delish.

New age? VS old age as old fashioned?

Here goes. I only have salted butter.
Using real eggs. 2 lge = 1/2 cup.
Using 4 ripe plums.
10 in pan.


I will be back with the taste test and if hubby will ask for my hand again

Well now

After dinner I put out the torte and the Mr helped himself and went to eat it on the deck.

Later I looked out and asked him if the torte was good.

With that Cancer sideways crawl look, he said "um ok I guess but can I have some more of that cake"

From him, that`s better than a proposal.
