You need a permit to harvest the state grain of Minnesota, wild rice. You have to follow strict regulations because you have to access the plants from the water and follow traditional ways of harvesting.

Native Americans tapped the seeds into their canoes with long poles. It's still done in a similar way. I guess that's why wild rice is so expensive. Wouldn't it be fun to do it yourself?Anyone can get a 1-day permit according to the State web site. (A good reason not to sell my canoe yet.)

The good thing is that it can quadruple in bulk when you cook it so it goes a long way. Just add 4x the water when you measure it out.

You can bake it like rice, but it will take about 45 minutes to an hour at 350 degrees. I love its nutty taste. I always made it as a side dish but would love to have a great main course recipe (hint).
