I just tried this little gem and I love it! I think using fruits and vegetables in cakes makes for the best recipes. I'm a wiz at pumpkin and carrot cakes, but had never tried zucchini cake before. I found a recipe similar to the one I tried here; http://www.mrsregueiro.com/2010/11/zucchini-cake-with-lime-cream-cheese.html I don't think the frosting necessarily has to be lime though :-) Though it sounds exciting. Yum! I will try it. I like grating the zucchini really fine for breads and cakes. Sort of fine and stringy. To me when the grated bits are large, it's unappealing, and doesn't blend with the flavors as well. IP: Logged |
