I eat this several times a week. It's based on Chris Wark's Cancer-Fighting Salad (YouTube video here.) I wouldn't have tried it except at the end of that video he raves that it's "delicious!" I believed him....and now I agree.

I love doing the prep work, and I love having this ready in the fridge. And I love bragging that yes I do "prep work" and have my life in order sometimes!

Recipe

Dice several of the following vegetables:

Celery
Cucumber
Zucchini, summer squash
Broccoli stalks, peeled
Jicama
Red Onion/shallots
Bell peppers, purdy colors
Jalapeno peppers if you like
Fennel
Radishes
Frozen corn kernels, optional

Stir. If you are ready to eat, set aside about a cup of this mixture; obviously the rest gets put in a sealed container in the fridge.

Add to your diced salad just before eating:

Tomato chunks
Grated carrot
Sliced lettuce, arugula or other greens
Mushrooms
Avocado
Sprouts and/or microgreens

"Dressing," just stir all this in:

Raw sauerkraut
Spices: cayenne or chipotle pepper, curry powder, Italian seasoning
Oil: extra virgin olive, flax. Macademia nut oil is my favorite though I'm embarrassed to prefer something so weird.

Mystery solved, that is what I eat most days. It looks rather primitive in a bowl once you stir in the sprouts...if children are in the vicinity they will look at this salad in horror. It's prettier without the sprouts, so if you need your food to be presentable and socially acceptable, go without them.

I made this thread for Bella Fenice but hope others find it worth reading or trying.

I'm making an Israeli salad, that I finally tried early last year. It sounds similar to yours, but less ingredients: tomatoes, zucchini, cucumber, onion, lemon juice, oil, salt and pepper, and chopped mint.

Yummmm...craving that now! I've been eating fruit all day and want something tangy/salty now.

I love Middle Eastern food, like tabbouleh...I love fresh mint and thank heavens it grows like weeds....plus hummus, olives, flatbreads....all that. As I eat cleaner, I'm starting to be able to tolerate wheat again...wish I could make flatbreads on a slab of rock, cook it outside over an open fire, like in less developed parts of the world..."peasant food" looks so delicious in pictures...

That's way off topic but I'm hungry.

There's this plant called "molokhiye" and all us Arabs eat it but we all have different ways of cooking it. It's THE BEST. It's never used in salads but usually as a "sauce" on top of rice. You have to try it!

Nut and seed oils are delicious. They go rancid quickly though, so you have to buy in small quantity or keep them refrigerated.

Yes it is! It's usually sold frozen in Middle Eastern stores since I don't believe the plant itself if readily available in the U.S

I think that it is the same as Mallow.
There is a Middle Eastern restaurant nearby that uses Mallow and it is wonderful. Don't know if the owner grows it - I will ask who his supplier is.

Ditto! But wait...

Hold it...

Not sure if I can spell another Middle Eastern dish I like...mujeddruh? Mujeddarah? I'm afraid I'm not worthy of your love if I can't spell this one It's lentils and rice with sauteed onions on top.

I really do have to try it! It looks delicious in that picture...I love green soup. Thanks for letting me know it exists!

I'd add a little bit of apple or pear to mine..it makes foir a good contrast in taste.

OH MAN! Yupp, Mujaddara! I haven't tried it yet, though. I'm gonna post a recipe of this lovely Libyan dish soon. I think you might like it...

I've never been to a Middle Eastern restaurant....just this deli kinda place in London that served a lot of Middle Eastern food. I went there just about every day.

Looking forward to your recipe(s)!!! Have you lived in Libya?
