Not exactly sun dried, but I sliced a bunch of plum tomatoes and layered them in my dehydrator. There is enough so far to fill up three pint jars and I will be drying more. Do you think I should store them as is (I've done this before) or add olive oil to preserve them longer (never tried this)?

Dehydrator?

Whaddya, some kind of Hipster?

Used my parked car and a cookie sheet on a hot sunny couple of days, came out quite tastee.

ha ha, very funny

I pulled my dehydrator out of storage and it still works (oh yeah!) makes life easier.

They say you can set tomatoes out in the sun but have to bring them in at night so they don't get wet from the dew, and then put them out the next day or two until they dry completely.

Really, you put your tomatoes inside your car to dry? Sounds like a great idea.

Sure did the one issue is you have to keep an eye on them or they get completely dried out and kinda blackish

I found out that the traditional way of removing the juice and seeds first so they dry quicker takes all the flavor out.

My first batch tasted so good because I was lazy and left everything in, but it took forever for them to dry out. 2nd time split them and removed the juice and seeds and they tasted blah!!!

It's worth the wait to keep in the seeds and juice so that the flavor is not lost.

I also experimented with homemade olive oil (not mine, but from a farmer's market)

I soaked the tomatoes in olive oil, just enough to cover, and added seasoning... oregano, salt and pepper, and a little hot pepper flakes. This was with a small batch so not to spoil during the week.

Then used it with homemade bread toasted with a thin spread of Marmite, and added a green like spinach or lettuce or kale. The tomatoes softened up to make a great flavored sandwich. yum.

Each week I'm doing a different batch with olive oil and different seasonings. Can't help eating them out of the jar.

Been thinking about the car sun drying method.
Isn't there outgassing of plastics from the car that enter into the tomatoes? seems toxic. maybe it's better with an older car rather than a newer one
