I read an article yesterday mentioning how bigger is not always better - obviously larger turkeys can be harder to cook right. If I had a large family and was doing the cooking, I'd do two or three smaller birds (and would definitely try different brining recipes on each one) to give a nice variety.IP: Logged |

Thanks for all the wonderful ideas !! T, your one recipe uses apple cider but I think I will try cranberry juice. It does indeed look yummy and worth a try. Bigger turkeys are more difficult to keep moist. That`s been the case for me anyhow so I bought 2 @ 12 lb average to roast . Everybody leaves with a plate of bird. Padre, it would be a mighty chill to BBQ or smoke in 3 + ft of snow. Yeah, my Ex used to use a Weber every year.
They were really good. Thanksgiving was usually First Frost, if not Snow, so it was nice. (Not as good as the Lightning Storms out on the Porch Swing, but nice.)

Ta Da! birds in the over after a cozy night of brining in the wicked kitchen recipe (sans apple cider); I did use the cranberry juice. T,I will let you know how it cooked up! What are your new side dish`s?
