How in the world to get good cooked beans?

Mine don't get soft but stay hard forever!

i want to make some 10 bean soup tonight!!!

If your beans are too firm there could be a couple of things going on. You will just have to cook them longer if the beans are...
Stale (stored too long or stored in a hot dry place)
Not soaked long enough
Too much salt or salt added too early in the cooking
Acid foods added too early in the cooking (tomatoes, lemon, wine)
Water is too hard or high in minerals

Solution:

Use fresh beans

Wait to add salt or acid when beans are almost tender

Use distilled water or soft water

Use the slow salt soaking method:
Use 5 quart container
1 pound beans
10 cups water
2 teaspoons salt
Cover tightly
Refrigerate 6-8 hours or overnight

Thanks for good advice!
Mine came out good this time.
I rinsed them and put them in three quarts of unsalted water and boiled for 70 minutes then added onion, garlic, tomato, lemon, ham, carrots, and seasoning than simmered for about forty five minutes after adding some rice....
Turned out good for once.
Also yummy cold weather fare
Used sone kind of 12 or 14 bean mix.

Don't put in salt until they are as soft as you want them

Just received a huge frozen bag of precooked black beans.

Suggestions on use?

Someone suggested patties? How are bean patties made and how is the taste?

Yes, that is the best way.

Once I heard a suggestion to add a little sugar, and it was good that way.

Also, when you put the poultry seasoning in, or even Sage alone, it makes Great stuffing.

Forgot to make it this year, darn it!

Black Bean Bisque

Saute some finely chopped onion in oil

Dump the cooked (or canned) black beans into the pot and mash them while heating them through

Pour in some broth and season with cumin, oregano, a little salt and pepper

Squeeze in fresh lime juice, not a whole lime, maybe just half, but do it to your own taste

Purée in a blender and you have instant soup, delicious

You can serve it up with dill weed garnish and it makes a simple satisfying meal with a few healthy crackers or toast on the side. You will want to eat a big bowl at once.

Soaking dried beans Tip:

Just tried this suggestion earlier in the week with success... Soak the dried beans for two nights on your kitchen counter, not in the fridge, in water with a splash of milk added to it. The milk enzymes help soften the beans prior to cooking.

My good friend, an expert in the kitchen, offered this tip after I tried her famous bean salad made with her mix of perfectly formed soft heirloom beans.
