Have to admit, I make crappy homemade veggie burgers (ie bean burgers).

Tried several recipes and they usually all fall apart on the bun. Tried adding egg as a binder and still no joy.

Anyone have any ideas?

Seems like you need a stronger binding agent-

Have you tried a cornstarch and egg mix? Or flour and egg?

When I used to do my fish ones (no fat.. hence crumbled too easily) I used to mix it with the egg yolk only and with some ground up oats before mixing it in until it stopped being so sticky before grilling/pan searing. Perhaps the same would work with beans...

I made some good ones finally. I was determined cuz I made many, many flops. You need some rich ingredients like nut. That is the key and a good binder like brown rice and then some cheese can make it super good, too. All these will make a good one imo but don't eat too much cuz they are rich! lol

You can put beans in too but you need the other things

I gave up making my own, you can buy some really good ones like Yves or Boca brands.

Makes sense, for me am into self reliance and life hacks, cannot accept it is that difficult to form beans into a patty that is both stiff, and moist.

For me it is about the consistency of the mashed beans, to large, it falls apart, past like it will never brown.

I've made two batches of black bean burgers that turned out good, and didn't have problems with them falling apart. I never go by exact recipes, and I don't measure things unless I'm baking, but I'll tell you what ingredients I used.

1can of black beans, finely diced onion and bell pepper(not the whole thing, about a good handful of each), minced garlic, packaged bread crumbs, chilli powder, cumin, hot sauce(I like sriracha), 1 egg, worcestershire(edit-spelling bee fail) sauce, and a little salt. The patties themselves are still a bit bland tasting, but I smother mine in sautéed onions to add flavor. Next time I want to add a package of onion soup mix, which I think will be a nice addition.

I drain and rinse the beans, and pat them with a paper towel to get off excess water. I mash them with a fork just enough to where there are still some small bits of beans. Add everything except bread crumbs and then mix. Add the bread crumbs until the mixture is thick enough to form patties, but not too dry or they will fall apart. I bake mine in the oven for 30-40 minutes, then I brown them in a lightly greased skillet for a few minutes on each side. I haven't tried grilling them yet, but I think they would fall apart on the grill from sticking. This makes 4-5 good sized patties.

The texture on the outside turns out like a grilled hamburger, but the inside is still mushy. Next time I make them I'm going to make thinner patties so they dry out a bit more on the inside. What I love about them is that they can be frozen. I usually cut up a potato coated with oil and seasoning, and bake at the same time to make fries.

It's an easy meal on nights that I don't want to cook, but I'm still experimenting to perfect them.

I KNOW. It is a real art to make one good, Randall. I used to go to a health food store which was famous for a really good one. Nuts are key to give it flavor. I think cashews and other highly flavorful nuts have to be used. Also, cheese should be used too. You cannot make a good veggie burger that is too bland. It needs the strong ingredients imo

Made a GREAT one but screwed up a few things. It was black turtle beans, coconut flour and cream of mushroom soup( a natural one) It was too loose. Needed rice or more flour. Gonna try it again tomorrow but people went crazy over it( including the dog) When the dog likes something, you know it is good

Yes, the one I made today was GREAT but not enough binder and I should not have put on ketchup. It kind of ruined it so I am soaking the beans and will try again tomorrow.

People were fighting over them

You can also make an onion burger, which is rather good, not meaty per se, but tasty.
