Ah, definitely banana bread pudding. When I was little I used to buy it from street vendors. Tasted like a delightful piece of heaven. I put this recipe up once but yeah I'll post it again here. It's that wonderful.
- 220 ml of milk.
- 200 ml of coconut milk.
- 2 table spoons of condensed milk - the secret ingredient that makes it taste and smell so damn good.
- 100 gr of sugar.
- 2 big eggs.
- 20 gr of butter.
Mix all of these ingredients together.
- 6 big banana: cut into thin slices.
- 1 -> 2 loaves of baguette bread (or any old bread will do).
Cut the bread into small pieces, soak them in the milk mixture.
Line a baking pan with baking paper. Arrange a layer of banana, then spread a layer of bread mixture on top. Repeat.
Preheat the oven, bake at 165 - 175 degree until golden brown.
Serve cold.
And of course, little me never said no to a big helping of steamed banana pudding.
- 6 big bananas (thinly sliced)
- 60 gr rice flour, 120 gr tapioca flour
- 100 gr sugar
- 80 ml water (I'm a bit overzealous so I often use coconut water. And why not. YOLO).
- 80 ml coconut milk
- Big pinch of salt
- A squeeze of lemon
Mix everything together. Steam.
Eaten cold. Served with coconut milk, condensed milk, desiccated coconut and toasted sesame seeds.
Oh yes, I was about to forget banana "ice cream". When I was little I loved banana ice cream with a passion. A great treat to beat the tropical heat.
Recipe:
Take one banana and place it in a ziplock bag. Flatten it using a flat knife.
Heat up some coconut milk with sugar or condensed milk and add some flour to thicken. Pour this mixture into the ziplock bag. Add desiccated coconut and crushed roast peanuts.
Wait until it's frozen and enjoy.
Heh where I come from, bananas, coconuts and palm seeds are always plentiful and cheap.
