Had a mediocre yr Gardening, however the community had several massive community gardens that tbh, few people were harvesting.

This yr's creations:

-pickled carrots with rosemary, peppercorns and anise, pickled in that apple cider vinegar created a couple of years ago.

-pickled green cherry tomatoes, whole small tomatoes

-pear vinegar
-pear wine

-diced green tomatoes pickled with peppercorns

-herbal infused oil

10 gallons of apple wine, 10 gallons of apple cider vinegar. And the crab apple vinegar, made last yr, will take another year to ferment to completion.

All in all in getting the hang of this approach

Hopefully other people are excited and happy about what they are making, and can share some of the creations!!!

Hey, Padre, you've been busy. I'm experimenting with the dehydrator this year. Adding celery leaves, spinach leaves, now squash and sweet potato leaves. Takes up less space and great for sprinkling in soups and sauces.

Wow, two years is a long wait for food items. I guess that's why balsamic vinegar is so expensive... A long time in the barrels.

Depends, balsamic is literally "spoiled wine" the other things are more local items

Found it is better to make minestrone, then to freeze in my situation

As for your dehyradtion, makes sense, as long as you use the thing..my quibble is I'm a bit more primitive

For example an upset stomach accompanied by burps. It stops those burps.
