Thai Coconut, Lime and Tofu soupPint of vegetable stock Half pound white mushrooms (sliced) 1 inch of ginger, thinly sliced 1 bunch of spring onions, chopped 6 cloves garlic, thinly sliced 1 teaspoon minced chillis in oil Handful of basil Handful of coriander 2 limes (grate the rind and extract the juice) 1 fresh red chilli (thinly sliced) 1 can coconut milk 1 block of tofu (firm) - cut into chunky cubes 2 tablespoons soy sauce Get a big saucepan. Shove everything in it except the fresh herbs and lime, simmer for 20 minutes (don't let coconut milk boil - it goes grey). Add fresh herbs and lime, cook 2 minutes. Serve in bowls. Drizzle with chilli oil cos it's pretty and forms nice pools on the soup. Serve with a bowl of steamed sushi rice or jasmine rice. This is a winner, been making it for 10 years and there's always a stampede to the pan for seconds. I firmly believe it prevents colds. IP: Logged |

spanky, thank u very much for the zuchini slice. excellent. i did it today instead of grating it, i sliced it thinly but it is still alright, next time i'll grate it. it's excellent, the carrot is still kind of raw, or crunchy, really good, thank you. IP: Logged |

PIREI'm glad you enjoyed it. As you can tell there is plenty of room to play around with that recipe. I never tried slicing thinly but you saved me from finding out, thanks.  I think that you could also mix up the cheese if you wanted to. A mixture of tasty & a few others might go alright. Let me know how it goes next time?
