How would you interpret Saturn conjunct Mars(aries) square moon(cancer) in the natal chart?

Well the mars conjunct saturn in aries I would think keeps your impulsive nature in check and gives you discipline to go after what you want when perhaps otherwise you might start with enthusiasm and then give up; the saturn ensures you carry on till completion and gives you that discipline while aries in mars gives you the confidence and desire to initiate things and take chances. Saturn comes in and makes sure you have thought of everything and that you don't give up prematurely or makes sure you are not been overly confident and that you are been thorough.

Now this conjunction squaring moon complicates things a bit perhaps your mother undermines your efforts and gets in the way and robs you of confidence to pursue your goals. Perhaps females in your life make it harder for you to reach your goals in your eyes by not collaborating or believing in you or you blame them regardless if is warranted rather than take responsibility for your own emotional immaturity and moodiness that undermines your progress.

Perhaps your changing mood gets in the way of that drive and discipline resulting in delays and obstacles achieving your goals. Perhaps is a bit of all of the above.
