Progressed Sun, Mercury and Venus all conjunct by 1 degree. It’s not that visible in the chart. That one line over Venus actually belongs to Eros.

I believe that the child's natal chart is always a reflection of their parents' charts. People don't get children with random charts, totally different from one's own chart. That doesn't happen.

That's why I asked for the baby daddy's chart. Looking at both of your charts I noticed that you both have Jupiter some way or the other configured with the Ascendant or the Ascendant ruler.
Your Ascendant ruler Pluto is square Jupiter. The father's Ascendant is conjunct Jupiter.

So I thought, the baby's chart has to reflect the above.
The last week of December has the following configuration:
Mercury conjunct Jupiter square Neptune.
I'm pretty positive that your baby is going to have the Ascendant ruler in this configuration regardless of the actual day the baby is born.
You have a Pisces Sun, the father has a Virgo Sun. You both have Jupiter configured with your Asc or Asc ruler.

So let's say the baby is going to have a Virgo Ascendant, this means the following:
The Virgo Asc mirrors the father's Virgo Sun.
The Asc ruler Mercury is conjunct Jupiter and this mirrors the parents' Asc/Asc ruler configurations with Jupiter.
Asc ruler Mercury is square Neptune, this mirrors your Pisces Sun.

I figured there are only two positions of the Moon that come in question: Cancer or Libra

You have a Moon-Uranus square and I believe the baby will have that configiration, too. This is possible with a late Cancer Moon or an opposition to Uranus with a late Libra Moon.
The square is also possible with a Capricorn Moon. But the parents' charts don't show any Cap Moon indicators, so I excluded that possibility.

The father has a Cancer Moon and a Libra Venus. This makes me believe even more that the Moon will be in one of those signs.

I went with December 23rd because the Mercury-Jupiter-Neptune configuration is way tighter than on December 30.
On December 23rd the Moon will be in Cancer. The Uranus square will be a bit loose with a Virgo Ascendant but with that Ascendant the Moon will also be in H11 and this alone also mirrors your Moon-Uranus square, plus the Cancer Moon would mirror the father's Cancer Moon.

Your Dsc ruler is Venus in Aries conjunct Mars.
With a Virgo Ascendant the baby would have Mars in H7 mirroring your Dsc ruler configuration.

Looking at my natal and my mother and father for example;

I have a big 10 house stellium in aqua and cap;

My mom has Saturn conjunct her ASC in the 1st and my dad is a Aquarius moon and rising 👍
They’re both Pisces, and Neptune is conjunct my ASC ruler Venus, and part of a stellium conjunct my MC, and making tons of aspects to pretty much all my planets, it’s my most aspected planet in my chart.

My moms ASC ruler is moon in gemini, my dad has mercury in his first house; mercury is conjunct my ASC ruler as well and trine my Ascendent itself exact.

Our baby girl came 2 weeks early in a natural birth on Dec 15th at 10:14 pm (22:14)!!! ❤️❤️❤️
Btw our room number in the hospital was 2214! I don’t know if anyone’s familiar with numerology and if this has any significance? We thought this was an interesting coincidence.

The birth was very quick! My water broke at 8:44 (20:44) while I was lying in bed. I know it this exactly, because I was texting with a friend of mine at that time and suddenly felt a warm gush of liquid between my legs. The rest felt unreal!! We rushed to the hospital, I paniced and screamed for an epidural, but it was too late for anything! This little girl was already on its way! It was amazing!! I never ever thought it would go this fast!
