Hey everbody- I decided this year I am making big efforts to pay off my VISA...so I am baking cookies for friends and family.I would love to find out if any of you have some good tried and true recipes? Please contribute! Even though it's for Xmas, they don't have to be Xmas style they can be any kind of cookie you want.. The best cookies I was ever able to make came from a receipe on the back of the Tollhouse Chocolate Chips bag!My cookies come out funny. I am better with cakes, pies, breads, and pastries. Good Luck! IP: Logged |

Something my Grandma makes...not exactly a cookie, but addictive:Potato Candy Ing.- *1 Potato, Med. *2 Boxes Confectioner's Sugar (Chocolate, if you can find it) *1 tsp. Vanilla Extract *Peanut Butter Boil the peeled potato & then mash until lumpless. Add confectioner's sugar gradually until the mix stiffens. Add vanilla (b/f it stiffens). Spread onto cookie sheet, let it set some; coat w/ PB. Roll it up (ala cinnamon muffins, but tighter), & cut into pieces. Easy Chocolate Chip Cookies (Modified One Day When Corri Ran Out of Eggs) Ing - *1c Butter *1/2c White Sugar *1c Brown Sugar *1 tsp Vanilla Extract *1 Egg *One Lump of Peanut Butter, a little smaller than an egg *1 tbs Cocoa *2 1/2c all-purpose Flour *1 tsp Baking Soda *1 tsp Salt *2c Semi-Sweet Chocolate Chips Put your cookie sheets into the fridge long enough for them to get thoroughly chilled; put dough onto chilled sheets and bake - this prevents crackly little edges on your cookies Cream butter, sugar, and vanilla. Stir in eggs, PB, cocoa. Put flour on top of the mixture, and soda and salt, mix a little, then mix together w/ the rest of the ingredients (sans chocolate chips). Add CCs and mix again. Bake @ 375 for approx 10 min. Yield = 3-4 dozen. Or ten, if, like me, you eat most of the raw dough. IP: Logged |

Carolina Delights aka "Raggedy Robbins"Ing - *2c White Sugar *1/2c Milk *1/4c Unsweetened Cocoa Powder *1/2c Butter *1 tsp Vanilla Abstract *1/2c Peanut Butter *3c Quick Cooking Oats Combine sugar, milk, cocoa, and margarine in saucepan. Cook over medium high heat, stirring constantly. Bring mix to a boil for 1 min. Remove from heat & stir in vanilla, PB, & oats. Drop spoonfuls of batter onto sheets either consisting of or covered in greased wax paper. Let cool thorougly (or put into fridge). Note: This recipe, while good, rarely works for me, as I eat any bits I mess up. I'm clumsy, so I tend to mess up about half of the yield. And if you'd like to make something special for your parents or your b/f's folks...>trumpets and fanfare< My Grandmommy's Pecan Pie Ing - *3 Eggs *2/3c Sugar (rounded) *1 1/4c corn syrup (1/2 dark, 1/2 light...or, barring that, all dark) *1/3c butter (melted) *1 1/4c Chopped Pecans *1 9in Unbaked Pastry Shell (bucking tradition, I usu. use a store-bought Graham-Cracker Pie Crust) Beat eggs thoroughly w/ sugar, salt, corn syrup, and butter. Add chopped pecans & pour mix into pastry shell. THEN Bake @ 350 F for 50 Min. (check on it after no more than 40 min). To check if done, insert knife 1/2 way between center and edge - the knife should come out clean. IP: Logged |

Hey thanks Proxieme! Mmm that potato candy sounds interesting and yummy! I am having a baking disaster- I suck! First batch of cookies called for cake flour and my cheap butt decided to compare ingredients on the cake flour (expensive) and the all purpose flour complete for all your baking needs (cheaper). Of course they looked the same and I bought the cheaper one only to have my Norweigen sour cream cookies now be the size of hershey kisses- yes that's right they are like little eyeballs or something. All 72 of them! So my family will be forced to like them and now my third batch screwed up because I had to double everything and must've missed something but can't figure out what so now instead of chocolate chip cookies I am trying to make a huge chocolate chip bar that I can cut up. My second batch is in the freezer- wish me luck with that one  OK I know that was a whole bunch of complaining- but noone will listen- my bf is to engrossed in the latest Maxim, ah, aguilera, how does she look so hot, so I apologize for all this ranting. Hi Miss Fajita,All-purpose flour has a much higher gluten content than cake flour. Also, cake flour is a smaller grain, so when the batter is stirred gently, and evenly the fat coats the small grains creating a tender and soft product. Nah, I have had my share of bad experiences too. Several times in a cookie dough batch, I added too much baking soda and not enough egg---too much overwhelming base.
