Ok, so we've done this before... but damn it was fun!

I'm planning to throw a party/bbq for my sweetie's birthday (I'm back with the ex Virgo now, by the way - not the one I moved to the acreage with, the Virgo before him - LONG STORY ) and I'd like some bbq ribs. Is anybody here famous for their BBQ'd ribs? Can you tell me how to make them? How about the go-with's? And drinks? What's your fave's??

I want this to be really good. I want it to be impressive. (I'm a Leo, of course it has to be impressive)Please suggest the things you've enjoyed immencly, in terms of food and drink, and if you know how to make them, EVEN BETTER.

Thanks in advance, your ever lovin' lion.

I like to make potato salad and baked beans with ribs. is that boring???? and deviled eggs. Maybe those potatoes with onion soup mix in little foil pack on the grill. And grilled Veggie kabobs, and corn in the husk on the grill. Do you have a BIG grill? you can do every thing on the grill if you do. I like to put some apples in the bbq sause with pork ribs. Apples are great with pork.

Look up a recipe online.. I believe you should boil ribs first, then marinate them and grill 'em., brushing the sauce all over them throughout the cooking process.
MMMMmmm
If there is a deal on shrimp somewhere, skewer them and grill them with garlic and lemon.. the tastes go together really well.
A nice Greens salad.. with lots of arugula, sprouts, different greens and lettuce, with balsamic and olive oil on the side.
Corn on the cob never hurt anyone, and to be a wonderful hostess, supply toothpicks or floss.

Some sort of pastry.... croissants.....

My absolute favourite thing to serve ( vegetarian or not) Very very marinated vegetables ( with lots of mushrooms, they take on the marinade beautifully and are so juicy!!!!) Skewered and grilled. I marinate them for about two days. But in a pinch, earlier in the day.
I use a basic marinade.....
Balsamic & rice vinegar, soy sauce, crushed garlic, olive oil, lemon, a bunch of herbs, some classic italian salad dressing.
It is scrumptious!
I'll be there at seven with some wine.

well, I'm with you -- nothing better than ribs any day of the week -- I have a killer rib recipe -- I'm from the south, and fixed these when I went up north to visit friends -- they never wanted me to leave --

here's what you have to do -- do you have a Costco near you? If so, if you don't have a membership, find someone who does -- or ask them for a day pass to see if you'd like to shop there -- I'd call first -- but they have the best BEEF ribs -- you can get a huge package of them for about $17/$20 -- and they are very good quality -- or they have the nice pork ribs, as well -- these things are huge -- I buy them for my son and me, and I cut them up and freeze them in meal proportions and fix them as a surprise treat for him -- life is good !

and this is what you do -- buy --oh, gosh, I can't think of the brand of the bbq sauce -- it has a black lable -- NOT the Jack Daniels, but the bottle is kind of square -- it's not kraft -- but you buy the original flavor -- and put the ribs in a cooking bag, smother them with the sauce -- cook according to the bag's directions -- and those will be falling off the bone delicious ribs -- seriously ! If you have to put them on the grill -- cook them in the oven first, then toss them on the grill for no more than three mins., then serve -- if I can figure out the brand I'll post -- I got a brain injury from our house fire, and it affects my memory -- I can see the bottle, not the name -- ugh -- good luck ! He's lucky guy to have someone so thoughtful as you --

Ribs are too messy for my tastes. I'd stick with steak, or chicken. Carribean Jerk barbequed chicken is awesome.

Is your Virgo a neat freak?

Here'a killer salad dish that is so gooooood, and goes well with any grilled foods.
Use as much as you think for as many as you plan on serving:
Tomatoes chopped/bite size (homegrown if possible)
Mushrooms chopped (any kind you like)
Black olives (small)
Green olives
Red onion chopped
Mix all together
add basalmic vinegar & olive oil
kosher salt & fresh ground black pepper
toss well and chill for a couple of hours
When you are ready to serve top with crumbled feta cheese.
YUM!!!!!!!!

Omigosh!!!
I went to a barbeque after my show today, and someone made a taco salad.. it was soooooo good!!!!
Totally make that!!
She even put barbeque fritos (TM )on the top..
I don't know.. I am not a big chip eater.. but corn chips do it for me everytime. I get a hankering for them.
I've been on a reduced carb lifestyle to get rid of a stubborn five pounds that exercising doesn't touch.. but the fritos do it for me.
I wish I had a recipe, but man, you can google anything!

Hey, girl! How are you?! Its nice to see you around.

I like to bring a Green Salad (usually something with Feta) or Potato Salad to a BBQ. I like to make it like a Baked Potato though.

Potatoes
Sour Cream
Bacon
Green Onion
Cheese
Salt
Pepper

mmm Good.

I also like to make desserts. Quick easy ones.

A really simple one I love to do is Jello pudding mix, Cool Whip, Cream Cheese, store bought crust. (I think there are directions on the pudding box, but I just kinda whip it up.)

You can also mix pudding mix, Cool Whip, and fruit to make a yummy, creamy fruit salad. Its usually a huge hit with any kiddos. You can use any flavor you please. I believe the pudding to Cool Whip ratio is 1 small box to 1 small container. Its actually a variation of Pistachio Fruit Salad, but I like to make things my way. I don't usually follow any recipe more than once.

((((hugs)))) to you... and Happy Birthday to the Virgo (before the acreage Virgo), whom I know nothing about.

Remember that macaroni salad with the ham and cheese you posted a long time ago? That sounded so good ~ may be you can make that?

Mmmh, the only impressive drink I could think of that might go with your theme is Sangria! Pitchers and pitchers of ice cold Sangria. How about smoked cheese? Ouu. I would wrap chunks of a salty Spanish cheese in corn husks and place them over the BBQ for a few minutes. Just to warm up and acquire a taste.

Nigella Lawson and Jacques Pepin both have cookbooks for special occasions. There are a lot of good ideas you can explore with and may inspire you to make up your own.

Here is also an interesting website I have used from time to time:
www.epicurious.com

They have recipes from restaurants, and from the magazines Gourmet and Bon Appetit.

Have fun!

P.S. I've thought of another! (Cancer Rising ), my favorite italian tomato salad (insalata di pomodori) - wedges of bright red vine ripened tomatoes, sprinkled with sea salt and freshly cracked pepper, drizzled with extra virgin olive oil, and balsamic vinegar.

Btw, side question to Lioneye ~ did you ever come to communicate with your spirit guides? I ask because I read on GingerB's thread that you had a conversation with God and was wondering where you are at with the spirits.

Thanks!

lioney, mmmm..

the best way i found to cook ribs is this:

first of all, use baby-back pork as they are more flavorful and tender than beef.

parboil (simmer) ribs for about 45 minutes or longer depending on how many you have. I put corrander seed, a chopped sweet-onion, a few canned chipotle peppers and a couple bay-leaves in, with a pinch of salt and peppercorns. boil and then reduce.

after 45 minutes, throw them on the grill on low heat turning a few times, about an hour, then brush on your favorite BBQ sauce and turn several times, coating the ribs. we usually doctor up Stubs and add more heat to it, but once you've done all the steps above, it doesn't really matter what sauce you use. the meat will fall off the bone. overall cooking time is about 3 hours

I have tons of my own recipes for sides, btu you're better off browsing recipes to see what fits your taste.

also. marinades often have too much salt in them and tend to dry out the meat. if you want something simple I can give you a good dry rub recipe for ribs & chops.

let us know how it goes

Wow - some really yummy ideas here, guys (gals) - As for the sides, I think I'm going to copy some of them and forward to guests who ask if they can bring something, (only if they ask for suggestions)

Aphro, yeah my macaroni salad IS really good, but I make it for pretty much every BBQ I go to or host, and I want something a little off the beaten path for this one.
(as for the spirit guide thing - how does one ever really know for sure if they've gotten in touch with their own? I mean, you can assume you as much, and just have faith about it - but you never really KNOW for sure. You just intuit. Thanks for asking. )

Lovely your rib recipe does sound superb. I agree about pork ribs being juicier and tastier than beef ribs. Less bone too. (but more fat). I usually do boil them first. No garlic in the water?

Bluemoon, those kabobs DO look great. Maybe I'll have a few of those too.

PS: I have been searching the net for recipes as well, but there are just soooo many of them, it's just too hard to choose, so that's why I decided to check out some recipes that are personally endorsed by you lovely k-now-flakes.

Pix, that tomato salad sounds so very simple and yummy. My mouth glands started tingling while I was reading that. LOL..I suppose a person could embellish it a little too, if they wanted to.

Thanks, people for the input thus far.
Keep 'em coming if you got 'em. (drinks too)

Awww Ms. Lioneye... you are just so sweet. I love when someone cooks for me

Let's see... I think I remember whiskey punch (?). Just tons of bourbon with punch... a little strong for my taste.. but hey Also, spinach dip... yum. My Cappie loves the spinach dip. Tis good stuff... really.

My favorite version:
2 – 8oz. Philly cream cheese, softened
¾ cup heavy cream
1/3 cup grated Parmesan cheese
¼ tsp. garlic powder
1 bunch fresh spinach, chopped
OR 1-16oz. pkg. frozen cut leaf spinach, thawed & drained
1 - 13oz. can/jar quartered marinated artichoke hearts, drained & chopped
2/3 cup shredded Monterey Jack cheese

Using a hand-mixer, blend together cream cheese, cream. Garlic, Parmesan & Jack cheeses until smooth and creamy. Fold in chopped spinach and artichokes. Place mixture in oven-proof casserole dish. Bake @ 300 degrees for 1hour.

Oh yeah... don't know if you have a taste for cabbage, but if you quarter a head, sprinkle cracked red pepper all over, wrap in foil, and toss on grill until tender... mmmmmm.

What's for dessert?

Hope it all turns out great!

hi, 1scorp
Well, I told him what I was planning, and he insisted he didn't want any fuss!! I said, it's no fuss - it's pot-luck and all, and he said we can't inconvenience people like that! Such a fricken Virgo. (I know other Virgos that would have loved it, though)

So, we settled on going out for dinner - I bought, which was ok with him.

But, I still want to do that bbq thing, before summer ends. I'll just do it at my own house, for no reason whatsoever. He can come. And he can help. That's cool with him. lol..
