Yeah, that was why I was trying to e-mail Yivy about boudain. My roommate is in La. and always brings some home (I LOVE the stuff). I wanted to know if there is a chicken or veggie variety. I could live on boudain and chocolate

VR...boudain is boudain unless it has pork in it..<sigh>. Although you might try to make a dirty rice with ground turkey. Or with chicken livers...that one is pretty good. Mostly the stuffing on white boudain is like a dirty rice.

RATS! The dirty rice replacement sounds pretty tempting tho. I'll be dragging out the Paul Prudhomme cookbooks tomorrow (unless ,of course, you have a nice family recipe to e-mail me??)

Princess... I call it 'poor man's sausage' because its got mostly a rice filling. Becoming vegetarian is really hard when you get addicted to foods like this! I love everything cajun (except crawfish!).

I can't do any dead critter on my plate with it's head still attached... ewwwww GROSS! especially those that look like big ol' insects, like crawfish However, out of the shell, they are quite delicious !

I gave sausage up, but Italian was my fave
