I have jammed, jelled, blanched, frozen and stewed and canned my way through this summer of mega produce.

Just when I wipe my brow and look around, the corn, pumpkins, squash, apples,plums, pears and grapes "oh my" are still waiting their turn.

Thank goodness potatoes and onions just need a bath and stored for winter.

How have you all preserved your veggies and fruits for the long winter months?

More like long winter month here. Except for isolated days scattered about, only February gets really cold 'round these parts.

apple butter burns my nose. too spicey for breakfast. maybe they make a milder version down thatta way?

Yep, at Waffle House it comes in tiny packs like grape jelly or strawberry jam...and just as mild. It's a perfect complement to raisin bread toast.

I eat it with a spoon staright from the pack. I haven't been able to find it in any store, so I don't know how it might taste in another brand.

Local apple butter is too pungent for me.
My Grandmother said during WW2 when sugar was rationed and food scarce, the locals used windfall apples which were usually fed to the chickens or hogs.
Anyhow, they were tart and little sugar so they added the spices available. Allspice, clove and cinnamon. They still make it that way so it had to be an aquired taste. Smooth and creamy but awful
