Topic: What can you do with a cucumber?

They are growing like crazy this year and I can't eat them fast enough. Usually I dice them with zucchini and banana peppers from my garden and add oil and vinegar, salt and fresh dill weed. Tomatoes are plentiful but not ripe yet. My neighbor says she cooks cucumbers but I never heard of cooking cucumbers. Can you offer up favorite cucumber recipes to try? Thanks. IP: Logged |

Julia Child cooked them with butter.You can juice them with pineapple and mint. Blend them, too. Salad from Kimberly Snyder: 4 large tomatoes Large cucumbers - can't remember how many Lemon juice and olive oil I think there was salt, as well. I love fried green tomatoes at the end of the growing season. Didn't think to try cucumber that way. I guess leave rage skins on. ? IP: Logged |

Yes, the juicer. I had put it away for a while and forgot about it, duh. Salad looks great, like a fattoush. Tomatoes are finally ripe and soooooo delicious. I will try your recipe. Thanks.

Cucumber soup: I make this with a slow cooker. Add a lot of chopped unpeeled cucumber, carrots, one or two apple, pork ribs (I often use baby back ribs, trimmed off of the fat) into the pot, fill with water. Cook until meat falls off the bone and the soup tastes "rich". Idk how to describe this but you'll know when it's done. I don't use seasoning for this soup. "Pickled" cucumber: 6 cucumber, scooped out the soft seeds. Chopped into 3-4 inches thick pieces. Soak them in water with 2-3 teaspoons of salt for half an hour. Then drain. Half an apple, finely chopped, or blended/mashed. 2 teaspoons of salt 2 teaspoons of powdered chili 1 teaspoon of finely chopped ginger, 1 teaspoon of finely chopped garlic. 1.5 - 2 teaspoons of sugar !-2 table spoons of chopped spring onions. Mix everything together. Put the mixture in glass jars/bottles. It's ready to eat ater 3-4 days. Chicken-cucumber salad: Chicken fillet (or just any de-boned chicken you have on hand), boiled (with a piece of ginger), and chopped. Mix well with a bit of salt, sugar, pepper lemon juice and finely chopped young lemon leaves (yeah, those fresh young leaves makes it taste so much better). Add thinly sliced cucumber, finely chopped ginger, toasted sesame seeds, soy sauce, chili, rice vinegar and honey to taste. Add pickled carrot too if you want. Make pickled carrot: thinly sliced carrots soaked in rice vinegar + water, sugar, salt, chili and the white part of spring onions. IP: Logged |

Oh I don't. I keep the leftover in the fridge, coz it slow down the "pickling process". The longer you leave it, the more tart and sour it'll taste. IP: Logged |
