So you recognized this about Sess's character too, huh. Cool.
About Inuyasha, although he's emotional, at least in comparison to his brother, I can't quite picture him as a Pisces. Pisces is somehow too poetic, sentimental, and drippy for him. Inuyasha is sort of no-nonsense, and matter-of-fact about things... He does have a sort of watery longing to him at times (like when he moons over Kikyo, or fears he may lose Kagome), but to me, this is more of an deep Scorpionic yearning, then the dreamy/fantasy/teary-eyed Pisces type stuff.
About fictional characters birthdates in general…
When creating birth charts for fictional characters, I never limit the astrology based on the fictional character's birth date. These birth dates are often very arbitrary and have nothing to do with the characters actual 'personality'. I rather change the astrology of that 'universe' then change what I perceive to be the character's true personality. My guess is Rumiko Takahashi gave Inuyasha a winter birth to symbolize what a difficult life he's going to have... Rather then for any type of astrological significance. The Inuyasha ‘universe’ is fictional, so the way the zodiac overlays the seasons, and the laws of physics themselves, can be different in this ‘universe‘… Inuyasha could still be any sign you want him to be really (I say Aries!)
Although, if you want to be a stickler to the rules, I'd go for Inuyasha being born right on the spring equinox with a Sun at 0 degrees Aries.... Only winter was ending late that year due to some lingering snow storms or something. Or I could even see him as an Aquarius, with an Aries Moon and Venus, Scorpio Mars, and a prominent Pluto... He's always felt like a freak, feels he dosen't have a place in regular society, hates to be controlled, is wild and unpredictable, and also belligerent and stubborn in certain ways. Of course, if his Sun were in Aquarius he'd have to have a LOT of fire influences, and some Scorpio, to give him that volatile, passionate kind of emotionality that he has...
I actually made up a fake chart for Inuyasha a some years ago when I used to watch a lot of episodes, where I picked him for an Aries Sun... I posted it on this site, and I’ll post a rehash of it here, seeing as the topic has come up…

INUYASHA… Aries Sun (feisty, direct, incredibly brave, brash, and loves red), Moon in Scorpio (has a brooding side, has issues with letting go of the past, and kind of jealous when it comes to women), Asc in Capricorn (despite being a pretty wild kind of Aries, he has amazing self-control in battle, and a harsh ‘reality can be a biotch’ type of attitude). I also suspect he’d have Uranus square Sun…he feels like a freak, and is extremely independent and hates to be controlled… and that he has some hard aspects involving mars in his chart… like Mars opposite Pluto (violence and trauma in his life), or Mars Square Mercury (potty mouth)… and if he had a Cap rising, I think his 5th house cusp would be in Gemini instead of Taurus (cos of an interception of something) because at one point in his life he actually is in love with two women at once…Who look very similar but have totally different personalities… And Gemini is the sign of the twins…
I guess his chart would look something like this
Asc Capricorn (He has kind of a cynical, harsh attitude. Sees life as a struggle, and had a difficult childhood where he had to go without warmth and love in his life).
Sun Aries (His general personality is very fiery, rash and outgoing. In some ways he‘s rather innocent, like a big kid).
Scorpio Moon (He can be intense and broody at times, and has extreme emotions. He’s very self-protective, and hates to have his vulnerabilities exposed, yet seems to feel very deeply for loved ones).
Mercury Taurus (He can be kind of dense and literal at times… Misses subtleties…. Ever noticed how much of the comic relief on the show is based around Inuyasha being a bit dense when it comes too ‘touchy feely’ things! He thinks in a matter-of-fact, physically oriented, practical kind of way).
Venus Aries (He loves very passionately, will defend loved ones till the end. Tends to be blunt and direct socially, rather then diplomatic).
Mars in Leo (The boy can really put on a ‘Show’ when he’s fighting. He has beautiful long hair, and is rather dashing, dramatic and heroic when in action).
Jupiter in Cancer (He doesn’t concern himself with morality much… unless he get’s emotional about something).
Saturn in Gemini (Saturn would rule his Cap Asc, and having it in Gemini would make him good with witty sarcastic comments, even though he has that ‘simple minded’ Taurus Mercury. Saturn would be in the 5th… He‘s very proud and sharp tongued! Often comes up with snappy insulting comments when arguing or confronting enemies. Plus with Saturn in the 5th, expressing affection isn‘t the easiest for him. He feels awkward showing love).
Uranus in Cancer (It’d be square his Aries Sun. He‘s volatile, and feels like a misfit).
Neptune in Sagittarius (I’d be in a wide trine to Mars cos his sword gives him mystical powers).
Pluto in Aquarius (Pluto would be in his 1st (sometimes he can turn into a ‘Monster’), and opposite his Leo Mars for his extremism and intense fighting sprit… In his life he‘s encountered a lot of violence, trauma, blood, and gore)…

I guess, at my heart, I’m always going to think of this character as an Aries Sun and Venus, with Scorpio Moon, Capricorn rising, Mercury in Taurus square a Leo Mars, and Saturn in Gemini in the 5th house…. I’ve probably given this way to much thought, Ha ha! But I do love making up charts for fictional characters, I tend to do it for all my favorite shows, I’m constantly trying to figure out what type of natal chart the characters would have.
Hey, out of curiosity, I don’t remember ever learning about the circumstances of Inuyasha’s birth on the show… Was this information in one of the movies or the manga? I’m now curious about the storyline part of it.
