I am ISO recipes which use Light Coconut Milk (vegetarian, of course).

Just thought you splendid people might have some?

Hi Nephthys

I've been experimenting with coconut milk recently.
I made some pumpkin soup with it! You can flavor it with vegetable stock, curry, or chives. You just boil the pumpkin, drain, and mash with coconut milk, heat and add other flavors.

I also made coconut rice, just by boiling the rice and coconut milk together, drain, and serve.

Hi!!! I also thought of the rice, however, isn't that best with white rice? I only buy brown or brown+wild rice. I don't know if that would be good? Mmmm the pumpkin soup sounds great, however, I don't see myself making soup in this heat of the summer. Maybe in fall/winter.

MMMMMM Coconut cake and coconut icing!!! *DROOL* That is my absolute favorite!!! However, I am not allowed to have any sugar, so it would be kind of hard to make cake. (unless someone has a recipe using Stevia).

OMG Lalalinda ~

I love that song and know it well ~ they used it on the soundtrack for the movie Practical Magic, of which I own the movie and CD. They danced and sang to that song in the movie when they had "midnight margaritas".

I've mixed coconut milk with fresh pineapple in the blender and it's really good (sans the rum)....but I find it hard on your digestive system. (I'm not much of a cook.)

Dear Everyone ~

Thanks for all your wonderful ideas!!!
Tonight, this is what I made;

I used brown rice and cooked it in coconut milk + curry powder. OMG It was so scrumptious!!!

Then I cut a bunch of different veggies in large chunks: yellow squash, zuchini, eggplant, yellow onion, red & green bell peppers. I sauted' those in olive oil in a big skillet.

Then in a small saucepan I combined 1/4 c. coconut milk + 1/4 c. veggie broth + 1 t. cornstarch. Heated it and let it thicken a little bit. Threw it all over the sauted veggies.

Served the veggies on top of the rice. Voila!! It was excellent!!! My mother said, "where did you get the recipe for this?!" I said, "in my head".

I also made a small salad of yellow cucumbers over red lettuce, with mixed 3 beans on top. That was yummy too. We have a garden bursting with yellow cucumbers up the yin-yang so I make a salad with those every night.

Well I must go as my show is about to start: The Dog, Bounty Hunter. *giggle*

How about Haupia? (how-pee-ah)

Its a Hawaiian dessert. The consistency is kinda like a cross between Jello and pudding.

Ingredients:
1 c. coconut milk
2 c. whole milk, or half and half (the richer the better, I always say You can go with lower fat milk if you prefer)
6 tbsp. sugar
6 tbsp. cornstarch
1/8 tsp. salt

Directions:
Place all ingredients in saucepan and cook over medium heat until thick. Stir frequently. Pour and cool in a buttered 9x13 pan. When firm, cut into squares.

That is so funny! I've used coconut milk for pumpkin soup too! And here I thought I was the only one..
What I did was I cut the pumpkin into quarters and baked them for a bit. I peeled off the skin, chopped a few pieces, put in in a medium sized pot with some water, coconut milk, some milk (but you can leave that out if you are strictly vegan), coriander, basil, some black pepper and garlic powder.
It's a great soup for fall because the spices make you feel all warm inside. It's been a while actually since I made it so I do not remember the exact portions to use of the ingredients, but you can feel it out and use trial and error. Hope you like it!

That Hawaiian dessert sounds scrumptious!!! Only, I can't use dairy nor sugar. I use either almond milk or rice milk, and Stevia instead of sugar. Do you think it would turn out if I used those?

I have a recipe for a pumpkin soup which I make in the fall ~ I think I'll try adding coconut milk as well.

Here is another thing I made with the coconut milk :

I crushed ice in a blender.
Then I added the coconut milk.
Then I added some rice milk.
Then I added some Stevia.

It was excellent!!!! Now I am going to buy more coconut milk, make more rice, make some rice pudding, and make some coconut frozen popsicles with the blender recipe!!!
