Hello everyone, I thought it would be a good idea for us to share recipes! I have a few I'd like to share with you... Since my birthday I've decided to try to be more healthy and actually use my (sparkling clean!) hob for a change - and ignore the microwave for a while!Here is what i cooked today:
BEAN CURRY
Ingredients:
1 tin chickpeas
1 tin butter beans
1 tin red kidney beans
1 tin chopped tomatoes
2 tomatoes
tomato puree
2 small green chilies (optional - can use just one)
half and onion
clove of garlic
Salt
Oil - Olive or sunflower will do (I used a mixture of both)
Spices: turmeric, Kalo jeera ( i dont know the English names of this spice, but I believe you can buy them with the indian names on the packet)
OK I know that's a lot of tomatoes, but believe me it makes all the difference!
1. heat oil in a pan. Add in a little kalo jeera, garlic, sliced onion and the two chillies (chopped in half). Fry til the onions are browning.
2. Chop the two tomatoes into quarters and put in pan to get them to start cooking.
3. Throw in the beans and chickpeas. Add salt to taste and less than half a teaspoon of turmeric. Stir.
4. Add the tin tomatoes. Stir it all together and cover. Leave to cook for a while on a medium heat.
5. When its nearly ready add a squirt of tomato puree and let cook for a bit longer. This gives it a bit more colour and flavour. The tomato pieces should have melted right into the sauce towards the end.
6. Serve with basmati rice (or brown rice if you're really heatlthy!)

I also made a Prawn curry today today too. Here it is:
PRAWN AND VEGETABLE CURRY
Ingredients
1 packet prawns
mushrooms
carrots
Potatoes
2 small green chilies
Onion
Garlic
Salt, turmeric
1. Dice the potatoes, carrots and mushroom into small equal sizes - I tried to make them all match the same size as the prawns, just becuase it looks better!
2. Heat oil in a pan. Add the onion, garlic and chilies (chopped in half). Fry till onions are browning
3. Put in all the vegetables and prawns (if you are using large prawns put them in now, if they are tiny, put them in a bit later). Add salt and half a teaspoonful of turmeric
4. Stir and cover for a while. Leave to cook and stir occasionally till done.
5. If the curry starts to go dry, keep a kettle full of freshly boiled water ready so that you can add a few drops to prevent it burning. Beware of adding too much as this can make the flavour more bland.
Anyway that was what i cooked today, and doing these two dishes and the basmati rice took me just over an hour - which is not too bad! And I'm proud to say that it went down well with my victims!
