Let me know how they come out. I'm going to try to make them at some point too.

Here are some more ideas...

Stuffed Avocado

1 shallot
2 ripe avocados
2 cloves of garlic
5 tops of shiitake mushroom
1 cup of cooked rice
1/3 cup of carrots
1/4 cup of broccoli florets
2 tablespoons of red cabbage
2 tablespoons of oil
1 tablespoon of cilantro
1 teaspoon of jalapeno pepper
1 teaspoon of black pepper

In a food processor, shred the carrots, red cabbage, broccoli, garlic, mushrooms, shallot, cilantro, and jalapeno pepper. In a saute pan, heat the oil in low heat. Once the oil is hot, add the rice and allow to fry for several minutes before adding the shredded vegetables. Stir frequently while the frying continues for about 10 minutes.

While the stuffing is frying, slice the avocados lengthwise and remove the pit. Once the stuffing has a nice golden color, remove from the heat and let cool. It does not need to be cold but it should no longer be hot. When the stuffing has cooled at bit, take a spoon and gently begin to stuff the avocado halves.

OMG, T, those look delicious!
I've heard avocados being poisonous to dogs but then I have a bunch of raw FB "friends" who feed avocados to their dogs with no problems. So, I don't know.

Key Lime Mojito ~

key limes, regular limes, fresh mint, a bit of honey, soda water, Captain Morgan's spiced rum, ice.

Key limes are really tart, much more sour than regular limes. I substitued sugar with a small amount of honey as i prefer a less sweet drink and went heavy on the mint. It came out great!

I was in Puerto Vallarta at the end of this May and the avocados there are so creamy and good...one of my favorites was to have them make guacamole at your table...2-3 avocados, mix in chopped sweet white onion, garlic, serrano chili, salt & pepper.

Eat with tortilla chips.

Makes my mouth water just thinking about it.

Oh been having shakes a few weeks back. I never thought of making that sandwich. Carbs! Also we made avocado ice cream. Not as presentable as the scoops in page 1 but more rustic.
