please share how you like to eat yours.

Trying to figure out a new sandwich to make for dinner.

These all look delish.

Avocado Tomato Melt

A simple open-face one with just salt, pepper and olive oil.
Cracked garlic salt from the grinder might make it even better. Maybe some sliced black olives on it too.

The Beauty Detox Solution, has a few recipes in it. I haven't tried them, because I don't like avocado either, but meant to try it again recently - I'm trying to adjust my tastes a bit.

Funny, because at one point I want a fan of them either!

Not sure what changed, but i've liked them for a few years now, but don't buy them often enough. I had a craving recently so picked some up and felt like having lunch for dinner tonight.

You might find you like it better mushed up and spread on a sandwich with some other vegetables and maybe some hummus too? I could eat it plain on some toasted bread with salt and pepper now and think I will more often because, yes, they are really great for you. I'm trying to get back on a health kick and eat better.

Maybe try some again and see what you think.

Here's what i just finished eating - looks like a pizza, but it was an open-face on a pita, avocado with mozzarella and ricotta and veggies:

I probably couldve let it cook longer and next time will slice the mozzerella thinner and the tomatoes thicker.

Two people couldve split this with a cup of soup and been satisfied, i think, it was so hearty. But so good that i ate it all myself. lol

i like my avocado (organic r way way better) sliced in eighths with the seed popped out and lemon and or lime squoozzzed (winne the pooh style) into the hole . crushed sea salt and red pepper flakes .if having the pleasure to have limes then do pop open a lager and there u have it a perfect siesta anytime anywhere

This looks delectable

Coconut Avocado Ice cream


Ingredients


2 ripe medium avocados (about 1 lb. total), chilled $
1/4 cup sugar
1 1/2 tablespoons fresh lemon juice $
1 can (14 oz.) sweetened condensed milk
1 can (13.5 oz.) coconut milk*, chilled


Preparation

1. Pit avocados. Scoop flesh into a food processor, add sugar and lemon juice, and whirl until smooth. Add sweetened condensed milk and coconut milk and whirl to blend.
2. Pour mixture into an ice cream maker and freeze according to manufacturer's instructions. Freeze a metal bowl.
3. Scrape ice cream into cold bowl. Cover and freeze until firm enough to scoop, about 2 hours.
*For a delicate flavor, buy real coconut milk. For a bigger coconut hit, buy a product made with coconut extract.
Make ahead: Freeze airtight up to 2 weeks.
Note: Nutritional analysis is per 1/2-cup serving.

Avocado Fries!

Ingredients


Canola oil for frying $
1/4 cup flour
About 1/4 tsp. kosher salt
2 large eggs, beaten to blend $
1 1/4 cups panko (Japanese bread crumbs) $
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges $

Preparation

1. Preheat oven to 200°. In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.
2. Meanwhile, mix flour with 1/4 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates. Dip avocado in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.
3. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste.
Note: Nutritional analysis is per serving.

i'd love to try this. but instead of using sweetened condensed milk maybe use regular, rice or soy milk and raw honey for sweetener.

I'd die without avocados!

Have you noticed the difference is avocados? I dislike the type that are light and watery...I dont know which region they are from. I find them disappointing, haha. I like the heavy, rich creamy kind!

sand, bummer!!! No, it did not taste weird to me. It blended nicely with the other veggies too.

tbelle, i havent noticed the difference - or have never gotten a watery one (thank god lol) Yes, love the rich, creamy, smokeiness of them

You reminded me I need to pick some up. Been well over a week since I had my fix!

& that plate was a HomeGoods find I loved that aqua color! And I like square plates for some reason.

am thinking of picking up ingredients for Mojitos too. Been awhile since I had one of those as well and it's a steamy hot day over here. Be nice to have a cool drink .

Oh my God... absolutely LOVE avocados. those fries look to die for. must prepare some. they're perfect in veggie sandwiches. just about any type of sandwich actually
