Master bake mix:

2 cups brown rice flour
2/3 cup potato starch
1/3 cup tapioca starch

*Xanthan Gum replaces the gluten in wheat and helps prevent gluten-free baked goods from falling apart. 1/4 teaspoon per cup of flour is usually sufficient.

I've adapted to my favorite cookie recipe to be gluten free.

Cocoa Walnut Butter Cookies

1 cup master bake mix (see above)
1/4 teaspoon xanthan gum
1/2 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
6 tablespoons butter or vegan butter stick, softened
2 tablespoons shortening (I use palm oil or just more butter)
1/2 cup packed brown sugar (or Sucanat)
1/2 cup sugar
1 egg
1 teaspoon vanilla
3/4 cup chopped walnuts.

Cream butter and sugars, mix in egg and vanilla until fluffy. Mix all dry ingredients and combine with butter/sugar. Mix in nuts.

Roll into balls about 1" diameter and flatten slightly on greased baking sheet or parchment paper on baking sheet.

Bake at 350 degrees Fahrenheit for about 10 minutes.

All the grocery stores where I shop have a health food section, and the gluten-free flours are staple items in those sections.

Even people who feel healthy enough might want to check if they feel better when they go off gluten for a while. It's easy if you stock up on replacement items like rice pasta. I was amazed at how much better I felt when I eliminated wheat, even for a week.

I haven't checked every grocery store I go to, but have seen it at most of them.

Color me ignorant but why, if one is not ill [allergies?] from gluten would it be such a hot issue to remove it?

I'm not aware of it being a hot issue to remove it, unless there is an allergy or intolerance. The trouble might be in finding allergy test that's reliable and affordable, or even making the effort to get tested. I don't know many people who do.

Sometimes it's easier to just go off the gluten and see if anything good comes of it. This has been the case for me.

Also, even if one is definitely okay with gluten, I like the idea of rotating grains. First of all, you get a broader range of nutrients from these nutrient-dense flours...like the brown rice flour, quinoa flour, nut flours, etc. Also, it's preventative against developing an allergy to something simply because of over-consumption. I think that when wheat is over-consumed, gluten can be hard to break down, and at some point an allergy can develop from that stress/indigestion.

I'm going on the idea that if gluten-free food is tasty and accessible, people will try it, and then they might find themselves feeling more comfortable or even healed of things they never thought were related to gluten.

It's considered a toxin (even if not allergic) by many people and is thought to cause the gut lining to leak.

I asked because I see it everywhere on the market products and it reminds me of when sugar free was the key to health.

Sugar isn`t the problem but the amounts consumed is, So I wondered if it
was another craze to eliminate or like sugar, just reduce amounts consumed..

I guess that's a philosophical position: sugar itself isn't harmful, just overdosing on it.

I subscribe to that!

But still, one can be allergic to sugar. Now that most of it comes from the GMO sugar beets, there's probably greater sensitivity on the rise. Actually I'm thinking GMO sugar is not healthy even in smaller amounts...but it's always relative to a person and their ability to cope.

Apparently the main prob with gluten is that most wheat is now "modified". As are cornstarch, ascorbic acid, many things w don't even think about.

Hard red winter wheat (canadian) is apparently not at issue.

Any wheat that has been treated with bromide is also depleting the body of iodine and the ability to absorb it. Iodine being scarce enough, this can create problems with or without gluten intolerance.

But the recipes sound fantastic! And alternatives are always welcome, thanks!!

Alma Sun, that looks so delish! I would put chicken and pineapple on it!

GMO`s have destroyed the value of the majority of our foods.

I am a Chex addict. Out of curiosity, I looked and it is gluten free. So, if my gut is leaking, it isn`t from that addiction
