Potatoes- Best dressed for successDid you ever wonder, "What's the best way to dress your potatoes for a successful potato salad?" First of all, start with all purpose potatoes - the bakers will just plain disintegrate before your eyes. Boil them with their jackets in salted water for about 20 minutes. Then drain, cool, peel and slice them into thin rounds. Put a layer of slices into the bottom of a large salad bowl. Add your chopped fresh herbs (try basil), salt, pepper and a little olive oil and vinegar. Continue layering until everything is used. Only then, gently turn until they are all nicely and evenly dressed. Experiment with your own combination of ingredients, perhaps homemade mayonnaise. Doesn't matter as long as they are nicely dressed when they take their seat at your table. IP: Logged |

I don't eat potatoes. I don't think they make sense nutritionally and they taste like empty carbs. Like pasta. Or white bread. It doesn't give you much. IP: Logged |

Actually they are low in calories. It's what you put on them that's fattening. I read that they are really high in potassium and vitamin C. I don't know if they keep the nutrition after they are cooked, but who eats raw potatoes? You have good reasons for cutting them out of your diet. I love them, though, how they taste, and I love smothering them in butter and baking them or frying them so they're crispy. Comfort food to fill the belly. IP: Logged |

I wasn't thinking about the calories actually, just the nutritional value :-) I prefer sweet potatoes as a substitute. They are lower in both calories and carbs, have more fiber and more vitamins. A little less protein and potassium though, if that's what you're looking for. We all have our guilty pleasures. I prefer to spoil myself with pancakes and indian food. Chocolate occasionally. If I have white potatoes it's only in the summer so I can comfortably eat the skin. That's where all the healthy stuff is! :-) Also, if you decide to remove the skin, make sure you do it after you have boiled them. That way you don't loose too many nutrients in the water.
