I used to make cheese.

Probably a similar process.

Dion Fortune was responsible for much of the research that went into soybean processing.

Do you check for GMO's?

Don't know anything about homemade tofu processes. I get it fresh from the local Chinese restaurant when I want to cook with it.

They say eating a lot of tofu causes breast cancer because of the high natural estrogen levels but that doesn't stop me from loving it.

I know someone who makes their own soy milk, though, and I think that's the first step in making the tofu. Not sure, though.

The hardest part is squeezing out the whey.

I used cheesecloth within the cheese press.

It had two nuts, one on top and one on bottom, and you had to tighten it just right.

Too much, and the curd would seep out, too little and the whey wouldn't drip.

A matter of balance.

I wish I could say it was fresh from my family's Arkansas Dairy Farm, but alas...

Not my Generation.

Many, many Moons ago, Kemosabe, the grey cells, they fade...

Might have been from the Health Food Store, but I forget, hehe.

It wasn't Goats Milk, if you were thinking that. That came from the Organic Seventh Day Adventists up the hill. They had this really cool Christmas Sleigh in the Stable, with Jingle Bells on and everything.

That was an interesting place.

Swanleigh was my Goat, he was an Angora. I am an Spinner, and Mohair comes from Angora Goats. We had this really cool Brass Bell around his neck.

We had a Llama named Cochise in the pen as well, he was a Guard Llama.

Poor baby had a curvy back, so he was grumpy most of the time. Never spit on any of us, but he didn't much like the dog...

Just doing his job, I suppose.

He was actually registered; but he was born like that, so we sort of saved him.

He was fine for what we wanted, Fibre and Protection. He was also very well trained.

Llamas are social creatures, though. He spent a lot of time looking afar to the distance.

Got pictures of my daughters holding him by the lead rope.

We did go to a Health Food Store back then, but I can't remember the name of it.

I ordered the organic soybeans and cheesecloth and the starter. I did not get a tofu mold cuz I wanted a stainless one and they were pretty expensive, so if it comes out to be a mutant, so what
